Best Nkwobi Recipe

There are a few ways to prepare Nkwobi, but the base of this dish lies in the spice mix added to the cow leg beef. So, here is a full instruction on how this dish is made;

  • Parboil the cow leg: Get fresh cow legs and cut them into small sizeable pieces. Then, parboil the meat using a little spice and some seasoning i.e. salt, seasoning cubes, and salt.
  • Prepare the Potash mixture: Pour the ground potash into a bowl and add a small amount of water. Stir and set aside.
  • Prepare the Ingredients: Slice the onions, and grind the pepper using a mortar and a pestle. Then, grind the crayfish and Ehu seeds using a dry mill.
  • Make the Palm Oil Mixture: While the meat is cooking, add palm oil to a clean dry pot and add the potash mixture. Stir with a wooden spatula until the oil turns yellowish. Then add crayfish, pepper, and Ehu seeds. Stir well together.
  • Combine the Cow Leg with the Palm oil Mixture: Once the meat is fully cooked and the water is already dried up. Add the meat to the palm oil mixture and stir properly. Heat the mixture and stir to avoid burning.
  • Garnish: Garnish the dish with sliced into rings and Utazi leaves.

Tips and Tricks

The cow leg meat is quite hard and cooking it can be tough. It is advisable to use a pressure cooker to save gas or electricity. Sieving the potash mixture is another tip to take note of while cooking.

When the meat is cooked, you can add salt to it and stir before pouring in the palm oil mixture.
